Dark Chocolate Ricotta Mousse
Made with Perfect Italiano™ Ricotta

- 600g Perfect Italiano Ricotta cheese
- 200ml single cream
- 120g dark chocolate, melted, plus extra melted for drizzling
- 2 tbsp sweet Marsala or chocolate liqueur
- Finally grated rind of ½ orange
- 2 tbsp cacao nips
- Put the ricotta, cooled chocolate, Marsala (or chocolate liquer) and orange rind in a food processor and whiz until smooth.
- Add the cream and blitz once or twice until just combined.
- Transfer to individual serving glasses and top with cacao nibs and berries just before serving.
