Dark Chocolate Ricotta Mousse

  • 600g Perfect Italiano Ricotta cheese
  • 200ml single cream
  • 120g dark chocolate, melted, plus extra melted for drizzling
  • 2 tbsp sweet Marsala or chocolate liqueur
  • Finally grated rind of ½ orange
  • 2 tbsp cacao nips


  1. Put the ricotta, cooled chocolate, Marsala (or chocolate liquer) and orange rind in a food processor and whiz until smooth.
  2. Add the cream and blitz once or twice until just combined.
  3. Transfer to individual serving glasses and top with cacao nibs and berries just before serving.
