- Preheat oven to 250°C.
- Place tomatoes on a tray, drizzle with olive oil, season with salt and pepper and then place in oven and cook for 5-8 minutes until lightly roasted, set aside.
- In a small bowl, mix ricotta then spread evenly over pizza base, sprinkle over Perfect Pizza to evenly cover the base, then top with tomatoes.
- Place pizza in the oven for 10-15 minutes until the cheese is melted and base is crispy, remove from oven then top with torn pieces of prosciutto, fresh rocket and freshly cracked black pepper. Cut and serve.
Use salami, smoked ham or a different flavoured pesto for variety.
