Potato Meat Pie Bake

  • 250g Perfect Italiano Perfect Pizza Cheese
  • 2 tbsp olive oil
  • 600 grams Idaho potatoes
  • 3-4 slices Fresh chicken fillet (cut into bite sized pieces)
  • 3 eggs - beaten
  • 4 vine-ripened tomatoes, sliced
  • Pepper & salt to taste
  • Fresh Italian parsley, finely chopped
  • Softened Anchor butter (for brushing)


  1. Boil potatoes for 15 mins in Visions casserole and soak in ice water to cool down, peel the skin and then slice about 1cm thickness and spread evenly on a Pyrex Bake dish, before that brush some Anchor butter
  2. Preheat oven 180 degrees Celsius
  3. In a Corningware Plasma Saute pan, add oil, stir fry chicken, pepper & salt mix with potatoes
  4. Mix Perfect Italiano Perfect Pizza cheese and eggs in bowl
  5. Pour egg & cheese mixture over potatoes & chicken, place tomatoes on top
  6. Bake for 20-25 mins
  7. Sprinkle parsley and serve on Corelle plate
